We are starting out with Windows only. We will examine the possibility of rolling out Mac and Linux later on, but right now those builds aren't ready for primetime. I'm with you. on the one hand the feedback will help squash bugs and also potentially help for a better user experience for the people playing the finished version (through feedback) on the other hand, i dont want to play only part of the story, even worse when i play the full game idk. 8 months later and cant use my save anymore or forgot part of the story.
because if i begin the game again i will be able to play its system because i do know to some extent what will happen.

No, most of our outdoor scenes are a fair bit larger. That screenshot shows just a portion of it. Remember that Steam Early Access comes with access to the final game in addition to the beta content. As such, it's targeted more towards new users than our existing backers. You can always get it if you want a second early copy to Torment a friend, but for most of our backers the beta add-on directly on our web site is most appropriate.

What platforms will the beta be available through? Is this a Steam only or will it be through GOG as well? I had intended on redeeming my final key from my pledge on GOG, not Steam, so I'm hoping I can do the same with the beta. If that's not the case though, will redeeming the beta access on Steam lock my release key to that also?

The beta will be Steam-only. But as far as I know you can partake in the beta on Steam and still redeem the final game on GOG.
